Method
Start by washing and cutting your cucumber, if you are spiralling your cucumbers, make sure to strain off any excess liquid. Set aside in the fridge whilst you prepare the dressing.
For the dressing add everything to your high speed blender, blend until thick and creamy. Once blended remove the cucumber from the fridge.
Divide the cucumber salad into two bowls, add your dressing. Any extra dressing store it in an airtight container in the fridge for up to a week.
Sprinkle some nuts or seeds over the salad with an extra sprinkle of cayenne for that extra spice.
Notes: If you want the dressing more runny add an extra splash of nut milk.
